Health Benefits

Cruciferous vegetables such as cabbage and radish found in this recipe, contain glucosinolates, a sulfur containing compound which when converted to isothyiocyanates have a number of health benefits.

One of those benefits is through inducing phase 2 liver detoxification. This helps to metabolise xenoestrogens and xenobiotics protecting against breast cancer risk. (1)

Cooking, steaming and other heat processors can reduce the total isothyiocyanates in cruciferous vegetables reducing their health benefits.

This is why eating cruciferous vegetables such as cabbage and radish in their raw form (like in this salad!) can be very beneficial for your hormonal health.
