Hormone Loving Turkey Salad

 

Ingredients

  • 450g cooked turkey breast, sliced
  • 1 cup white cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 red bell pepper, finely sliced
  • 1 large carrot, grated
  • 6 radishes, finely sliced
  • 1 cup bean sprouts
  • 3 spring onions, finely sliced
  • 4 tbsp fresh coriander, chopped
  • 3 tbsp toasted sesame seeds
  • cup almonds, roughly chopped

Salad Dressing

  • ¼ cup tahini
  • ¼ cup water 
  • ¼ cup lemon juice
  • 1 garlic clove, minced
  • 1 tbsp honey

Directions

1. Prep all the vegetables, wash and peel where necessary.

2. Place the shredded cabbage, turkey breast, peppers, radishes, onions, grated carrot, coriander and almonds in a large bowl. Mix well to combine. 

3. Make the salad dressing by blending all the dressing ingredients together until creamy.

4. Pour the salad dressing over the salad and toss to cover. Serve straight away or store in the fridge until required.

Cruciferous vegetables such as cabbage and radish found in this recipe, contain glucosinolates, a sulfur containing compound which when converted to isothyiocyanates have a number of health benefits.

One of those benefits is through inducing phase 2 liver detoxification. This helps to metabolise xenoestrogens and xenobiotics protecting against breast cancer risk. (1)

Cooking, steaming and other heat processors can reduce the total isothyiocyanates in cruciferous vegetables reducing their health benefits.
