Are you looking for a granola without all the nuts?
If you have a sensitive stomach, you may find that eating too many nuts can upset your stomach or give you pain.
A nut sensitivity or allergy is also very common particularly if you have several food sensitivities.
For that reason I have put together a gluten free and nut free granola recipe that you can whip up very easily at home.
(Please note: If you’re still unsure on how you digest seeds, I would highly suggest you do the extra step on soaking your seeds over night. Further information found below.)
Nut Free Apple and Cinnamon Granola
Prep and cook time: 25 minutes
Makes: 2 cups (serves 7 at 1/3 cup each serve)
1 cup raw, hulled buckwheat
1/4 cup pumpkin seeds
1/4 cup sesame seeds
1/4 cup sunflower seeds
1/4 cup dried preservative free apple
1.5 tsp ground cinnamon
1/4 tsp all spice
1/3 cup coconut oil
2 tbsp 100% maple syrup
To increase the digestion and absorption of minerals in this recipe soak the buckwheat and seeds in filtered water. Add 1 tablespoon of apple cider vinegar and soak over night for 8 hours. Drain and rinse.
Directions
- Preheat the oven to 180 degrees C.
- Line a baking tray with baking paper, or use a non stick tray.
- Put all of the dry ingredients together in a medium sized bowl, tossing to distribute ingredients evenly.
- Mix 1/3 cup coconut oil and 2 tablespoons of maple syrup in a separate bowl.
- Pour the coconut oil and maple syrup mixture into the dry ingredients, stirring until evenly covered.
- Pour the mixture onto the tray, creating a thin layer.
- Put in the oven for 10 minutes, take out and stir.
- Cook for a final 5 minutes until golden brown.
- Serve with 1/2 cup of your choice of yoghurt ( I like coconut yoghurt) or milk and top with fresh fruit.
- Store in an air tight container.
