Ingredients
  • 7 eggs
  • 5 pieces of short cut bacon
  • 1 medium sized red capsicum
  • 1/2 brown onion
  • 5 sprigs of chives
  • Sea salt
  • Cracked pepper
Directions
  1. Preheat oven to 180 degrees C.
  2. Using a muffin tray, line 6 cups with baking paper.
  3. Cut the short cut bacon in halves length ways and sit them on the out skirts of the muffin cup.
  4. Dice the red capsicum and brown onion and chop the chives.
  5. Crack the 7 eggs into a jug for easy pouring and stir until egg yolks and whites are well blended.
  6. Grind the sea salt and cracked pepper into the egg mixture.
  7. Spoon the red capsicum and brown onions evenly into each muffin cup.
  8. Pour the eggs evenly into each muffin cup and sprinkle the chives on top.
  9. Pop in the oven and bake for 20 minutes until well cooked.
  10. Serve with a salad for a quick lunch box idea, or have for breakfast on the go.
