Ingredients
- 7 eggs
- 5 pieces of short cut bacon
- 1 medium sized red capsicum
- 1/2 brown onion
- 5 sprigs of chives
- Sea salt
- Cracked pepper
Directions
- Preheat oven to 180 degrees C.
- Using a muffin tray, line 6 cups with baking paper.
- Cut the short cut bacon in halves length ways and sit them on the out skirts of the muffin cup.
- Dice the red capsicum and brown onion and chop the chives.
- Crack the 7 eggs into a jug for easy pouring and stir until egg yolks and whites are well blended.
- Grind the sea salt and cracked pepper into the egg mixture.
- Spoon the red capsicum and brown onions evenly into each muffin cup.
- Pour the eggs evenly into each muffin cup and sprinkle the chives on top.
- Pop in the oven and bake for 20 minutes until well cooked.
- Serve with a salad for a quick lunch box idea, or have for breakfast on the go.
