A Guilt Free Dessert

This is my go to dessert when my husband and I are craving something sweet. It’s so easy to make and only requires a handful of ingredients that you probably already have in your fridge and pantry! It contains absolutely no additional sugar or sweetener, using only the natural sweetness of the fruit.

Baking time: 40 minutes

Serves: 6

Ingredients
  • 3 red apples
  • 1 1/2 cup berries
  • 1 tablespoon almond meal
  • 1 lemon squeezed
  • 1 tsp cinnamon
Crunchy Coconut Topping
  • 1/4 cup walnuts
  • 1/4 cup sunflower seeds
  • 1/4 cup shredded coconut
  • 5 medjool dates
  • 1 tablespoon almond meal
  • 1/4 tsp cinnamon
Serve with
  • 2 tablespoons of coconut yoghurt per dessert – Coyo Vanilla is my favourite!
Directions
  1. Use a muffin tray and line six of them with baking paper (will vary depending on the depth of your muffin tray) or a 20 cm x 4 cm baking tray
  2. Set the oven at 180 degrees C.
  3. Peel and core the three red apples. Thinly slice, and cut in half.
  4. Squeeze lemon juice and add 1 tablespoon of almond meal over the apples.
  5. Add one teaspoon of cinnamon.
  6. Stir the apple mixture and let it sit at room temperature for half an hour, allowing the flavours to soak into the apple.
  7. Meanwhile add all the topping ingredients into a high speed blender until well blended (should look like a similar texture to oats).
  8. Spoon the apple and berry mixture into muffin tray or a 20 cm x 4 cm baking tray and then add the topping and press down with the back of a spoon.
  9. Bake for approximately 40 minutes, or until the topping is crispy and brown.
  10. Serve alone or with some vanilla coconut yoghurt, or for something a bit sweeter serve with vanilla coconut ice-cream.
